Huckleberry Scones

So... once again, I'm having a moment where I'm obsessed with huckleberries.

A few weeks ago, my husband and I went exploring the Montana mountains and unexpectedly came back with a coffee can full of little purple beauties.

I'm a sucker for any and all pastries so naturally I had to incorporate these huckleberries into some sort of baked good. I decided to try my hand at making scones, (something I had never attempted before.) I discovered that not only are these scone relatively easy to make, but they are wonderfully delicious, good for a quick snack on the go, and even better for dessert. I hope you enjoy them as much as I did!

Anna Ingredients: -Scones- 2 cups flour + more for work surface 1/2 cup granulated sugar 1 Tbsp baking powder 1 tsp salt (more or less to taste) 1/2 cup unsalted butter, keep cold 1 egg 1/2 cup sour cream 1 tsp vanilla extract 2 cups wild, fresh, huckleberries -Icing- 1 cup powdered sugar 2 Tbsp fresh lemon juice 1 tsp lemon zest ( more or less to taste) Raw sugar optional for sprinkling Directions: 1.) Preheat oven to 400°F. Line baking sheet with parchment paper, set aside. 2.) In a large bowl, add flour, sugar, baking powder, and salt. Whisk to combine. 3.) Cut in butter with pastry cutter (or your hands) until butter well incorporated. 4.) In a separate bowl add the egg, sour cream, and vanilla. Whisk until well combined. 5.) Fold the wet mixture into the dry mixture and fold until just combined. Be sure not to over mix. 6.) Fold in huckleberries. 7.) Sprinkle dusting of flour over clean work surface and lightly coat your hands. 8.) Place dough on to floured surface and knead into 10 inch round circle. 9.) Use large knife to cut dough round into 10 equal sized wedges. 10.) Transfer wedges onto baking sheet spaced at least 2 inches apart. 11.) Sprinkle each wedge with a pinch of raw sugar. 12.) Bake for about 15 minutes or until scones are lightly golden on top. 13.) Allow scones to cool. While scones are cooling, it's time to make the lemon glaze. 14.) in small bowl mix powdered sugar, lemon juice, and lemon zest. Whisk together until smooth. Add more powdered sugar or lemon juice depending on consistency. 15.) Drizzle over scones. Let sit until glaze hardens. 16.) ENJOY!
